Delicious foods and frugal recipes from some of our favorites!

Homemade Veggie/Potato Chip Dip

This homemade dip has become another favorite of our family and friends.  It’s much healthier than store bought stuff, and delicious too!

Veggie/Potato Chip Dip

1 c. Daisy sour cream                                           1/2 c. real mayonnaise

1 t. dried dill weed                                                  1 t. garlic powder or pressed garlic

1/2 t. black pepper                                                  1/2 t. salt

Mix all ingredients thorougly in a medium sized bowl.  Cover and refrigerate for at least 1 hour prior to serving.  By buying the sour cream at our local Walmart or buying club, and getting the mayo on sale, we can make this dip for a total cost of roughly $$1.54

Hot Roast Beef Sandwiches

This recipe is a favorite at our gatherings.  Since we buy the beef by the cow, we generally get our organic, grass-fed beef for about $3.50 a pound.  All said and done, this is a cheap main meal to serve at gatherings.

Hot Roast Beef Sandwiches

5 lbs. chuck roast, preferrably grass-fed           3 c. water

8 garlic cloves, pressed                                  1 white onion, finely chopped

1 T. ground black pepper                               1 T. salt

Put all ingredients in large crockpot, cutting up roast if necessary to make it fit.  Set crockpot on low and cook for at least 12 hours.  Add more water as necessary if moisture level gets low.  Serve on buns as sandwiches, or with mashed potatoes and/or bread.  Total cost: Roughly $20

RECYCLE:  Use leftover for stew by adding chopped carrots, celery and potatoes to leftover beef and cooking in crockpot until vegetables are tender.   Add more water and/or seasonings to taste

Here’s our family’s little twist on an old favorite that’s a big hit everywhere we go!

Healthy Hearty Pancakes

Although traditional pancakes are fun once in a while, we try and stay away from serving them on a regular basis due to a lack of nutritional value.  This pancake recipe is different and delicious, a terrific energy building breakfast that’s packed with Omega 3′s.   Hearty Pancakes RecipePhoto credit: Becky Luigart Stayner, courtesy of Cooking Light.  Read more

This quick and easy high-protein breakfast “meal” is perfect for when I don’t want to cook but I want the kids to have a semi-healthy breakfast.  We make these babies up in about 5 minutes and serve them with apple slices.  And don’t be fooled by their size, they’re super filling! Read more

Best Turkey Brine

A friend of mine swears by this turkey brine.  She has family members who never cared for turkey until they tried her recipe.  If you’re looking to give your turkey and extra “oomph”, here’s the way to do it.  This particular recipe is for a 15-pound turkey.
For the Brine:
2 1/2 gallons water
2 1/2 cups kosher salt (we use 1 cup)
1 cup maple syrup (we use a half a cup)
12 bay leaves
1/4 cup peppercorns
For the Turkey Prep – Day of:
1 head garlic, broken up
1 stick butter, softened
1 pkg. rosemary
1 T dried thyme
1T dried sage
2 lemons, cut up
1 onion cut up
3 carrots (optional)
Two days ahead (or up to 4 days ahead):
Put water, salt, syrup, peppercorns and bay leaves in a 5 gallon stockpot, cover and bring to a boil.
Stir to help dissolve salt. Remove from heat and let cool. Refrigerate overnight.
One day ahead:
Place 15lb. fresh or freshly thawed (not frozen) turkey in the brine and refrigerate 12 to 24 hours before roasting turkey.
Day of:
Remove turkey from brine and discard the brine. Rinse turkey and pat dry.  Loosen the skin from the neck on each side of the breast to create a pocket to place herbed butter in. Cover turkey under the skin and all over it with herbed butter.  (For herbed butter, mix the butter with the thyme, sage and rosemary plus a few grinds pepper.)
Sprinkle with Salt and pepper.  Place lemon, orange, onion and head of garlic along with some fresh thyme inside the cavity.

(Optional) Roughly break up a few carrots, celery and quarter one onion and spread in the bottom of a roasting pan.  Set turkey on top and cover entire pan tightly with heavy duty foil.
Roast for 2 hours at 325 undisturbed.  Then remove foil and continue baking for allotted necessary time (using the rule of 20 minutes per pound, and subtracting the 2 hours you’ve already cooked it for) until golden brown and the thighs reach 170 degrees.  Let the turkey rest with foil tented over it for 30 minutes before slicing.
