Chipotle Rice


This is one of our favorite lunch and/or dinner recipes.  Cheap, tasty and filling, Chipotle Rice meets all of our criteria for a DE meal, and it fits into our cheapest meal category, feeding our family of 6 for about $1.24.

Chipotle Rice

3 c. dry parboiled rice (bought in bulk at Sam’s club – 36 cents)

1/2 bunch fresh cilantro, chopped fine (30 cents)

1/2 lime (20 cents)

1/3 to 1/2 red onion, chopped fine (30 cents)

2 T. Olive Oil (bought in bulk – 3 cents)

salt and pepper to taste ( 5 cents)

Cook rice as directed.  When rice is done, add olive oil and juice/pulp from lime half (clean it out good, using every ounce of flavor).  Mix well.  Add cilantro, onion, salt and pepper, and mix well again.  Ready to serve!

**Want to spice it up? Serve it with fresh guacamole dip.
