As we work to eat primarily whole foods at our house (sprinkled in with the occasionally delightful dessert), I keep working to find new and delicious recipes that will keep the family “epicurically entertained”. Enter, Cowboy Salsa, or as some like to call it, Cowboy Caviar. Of course, the name means it fits well here on the farm. Truth be told, I stole the recipe from my auntie Bev, and added a few things to make it my own. It’s a super easy recipe that goes well with any kind of a Mexican dinner or as a simple addition to tortilla chips.
Cowboy Salsa
1 10oz. bag of frozen, organic non-GMO sweet corn, thawed
2 14oz. cans of organic black beans, drained and rinsed
4 large roma tomatoes, chopped small
1/2 c. finely diced red onion
1/2 c. finely diced green pepper
1/2 bunch of fresh cilantro, chopped fine
salt and pepper to taste
The rest is easy. Just mix the ingredients together and let sit for a few hours or overnight in the fridge so that the flavors have time to blend and meld.

I love cowboy caviar, especially when we have lots of tomatoes in the garden. We’ve been known to eat this for dinner with tortilla chips. Also a great snack to take to parties or serve when hosting.
