Blueberry Streusel Muffins

Here’s a great muffin recipe that will go over great at any breakfast or brunch event.   Taken from an old church-type cookbook, where all great recipes originate from. 🙂

Blueberry Streusel Muffins

1/3 c. sugar

1/4 c. butter, softened

1 egg

2-1/3 c. flour

4 tsp. baking powder

1/2 tsp. salt

1 tsp. vanilla extract

1 c. milk

1-1/2 c. fresh blueberries

Streusel

1/2 c. sugar

1/3 c. flour

1/2 tsp. cinnamon

1/4 c. butter

Preheat oven to 375 degrees.  Prepare 12-muffin pan with muffin liners.  In large bowl, combine sugar, butter, egg, baking powder, salt and vanilla.  Mix well.  Add flour and milk and combine thoroughly but don’t over mix.  Fold in blueberries.  Spoon evenly into 12-muffin pan.  In small bowl, combine flour, sugar and cinnamon for streusel.  Cut in butter until crumbly.  Sprinkle over muffins.  Bake for 25 minutes or until a toothpick comes out clean.
